The Vegan Thing

Much belated thoughts regarding my week of veganism from October (yikes!):

1.) I ate a lot of oatmeal and peanut butter
2.) Breakfast was the most difficult meal for me (no yogurt or eggs?!)
3.) I discovered spaghetti squash and made up my own refried beans/rice goop.
4.) I felt bloated all the time from the fiber…dislike.

Perhaps if I could have a Native Foods chef cook for me everyday, I could be vegan. However, I enjoy food and flavors too much to be so restrictive.

I’m going to revert to baking next time…and it won’t be a 2 month wait. Pinky promise.
